Maple syrup on pancakes is a tradition about as American as Apple Pie but here in South Africa its a little known flavour and usually found in its sweetest and lightest grade A form (if at all). Don't be fooled by the 'maple flavoured' syrup you see on our supermarket shelves - it's not maple syrup at all but just plain old 'golden syrup' with some chemical flavouring added and a label designed to fool you. Maple syrup is made from the sap of living maple trees - the lifeblood of nutrients the tree produces to fuel its seasonal growth. Although it consists mainly of sugar, maple syrup also contains some essential vitamins and minerals and has an earthy, full-bodied flavour.

Because the Grade B (Canadian No. 2) maple syrup required for the Master Cleanse detox diet was impossible for us to find here in South Africa, we began importing it directly from the USA for ourselves and our friends. You can now buy it online and at some of the better health food stores. Grade B has a darker colour and a robust maple flavour - authentic, complex and delicious!


A Healthier Sugar?

While sugar is an essential energy supply for your body, it is a substance which is easily and often abused. Not all sugars are the same, however, nor is their effect on you.

What we all know as "sugar" (regular white or brown refined sugar) contains, in roughly equal proportions, two different types of sugars: Fructose and Glucose. In your body the glucose molecule can be used immediately by every single cell, providing ready energy for your entire body (especially your brain). Glucose is stored by the liver as glycogen, ready for use when your glucose supplies dwindle. Fructose, however, cannot be metabolised by your cells directly and must be processed by your liver which stores at least 30% of it as fat.

The advent of High Fructose Corn Syrup (HFCS or Corn Syrup) has seen dramatically increased consumption of this type of sugar. It is used in thousands of food products and almost all sweetened and fizzy drinks (including fruit juices) as it's both cheaper and sweeter. It is becoming increasingly evident that this type of sugar contributes most to weight gain, obesity and insulin resistance and should be avoided.

Maple syrup consists of over 95% glucose, making it a far more desirable sugar substitute than regular sugar, "golden" syrups or high fructose sweetners like Agarve nectar, honey and HFCS. Nevertheless it is a sugar and should always be used in moderation.


Product Origin

Our maple syrup comes from trees grown on the Coombs Family Farms and other small, independent maple farms in New Hampshire, USA. It is USDA Organic Grade B Maple Syrup, and the QAI organic certification ensures that no additives like artificial flavours, preservatives, thickeners or paraformaldehyde are used in the product. The syrup is also kosher.


Storing your Maple Syrup

Store unopened bottles of syrup in a cool, dry place that is ideally slightly below room temperature and out of any direct intense light. Maple syrup has a shelf life of well over two years, but once opened, it should be refrigerated.
